Farm Store News Our vegetable garden is providing us with zucchini, cucumbers and eggplant,all available in our farm store.  This is the time of year to enjoy fresh, delicious vegetables.  We also have sweet corn, peppers, peaches, nectarines and much more. In case you missed our previous newsletters, we are selling pickles, salsa, and have also stocked our shelves with other exciting items for snacks or as a complement to our existing products.  We wish to highlight a local chicken rub which will enhance the taste of our chickens if you want to add a little extra zing to your meal. Food of the week: Zucchini Zucchini, like all squash, has its ancestry in the Americas. However, the varieties of squash typically called “zucchini” were developed in Italy, many generations after their introduction from the “New World”. In all probability, this occurred in the very late 19th century, probably near Milan; early varieties usually included the names of nearby cities in their names. The alternative name courgette is from the French word for the vegetable, with the same spelling, and is commonly used in France, Ireland, and the United Kingdom. It is a diminutive of courge, French for squash. “Zucca” is the Italian word for squash and “zucchina” is its diminutive, becoming “zucchine” in the plural. Recipe courtesy of Karen McEnroe, Princeton Junction, NJ I love this recipe because you can make a number of quiches in advance, freeze them and then warm up to serve at a brunch, a meal side dish or as an appetizer.  Or better yet, prepare and bake fresh.  My grandchildren even love this quiche.    Ingredients: 3 cups shredded zucchini (peel first)Ingredients: 1 cup Bisquick 1/2 cup chopped onions (I use Vidalia onions) 1/2 cup parmesan cheese 2 tbls dried parsley 1 clove chopped garlic 1/2 cup canola oil 1/2 tsp salt 1/2 tsp dried oregano 4 eggs well beaten 1/2 tsp dried oregano   Directions: Preheat oven to 350 degrees. Farm Store News News from our Farmers Markets: The best kept secret is out and is available at our farm store and our farmers markets.   Chef Adam recently created a Vegetarian Pot Pie both vegetarians and meat eaters would enjoy.   See food of the week below for additional information.
