I altered this recipe slightly by adding some stuffing mix and broth and it was AMAZING. I added one and one-half cups of dried, seasoned stuffing mix and 8 ounces of chicken broth to the ingredients. I used a roasting pan with a cover so everything stayed moist, and I took the cover off during the last 20 minutes so it had a chance to brown nicely. The oven time and temperature were both spot-on. When I sliced the meat and spread it on a platter, it looked just beautiful -- but it didn't last long because it was all gobbled up so fast!

“Cojonudos” are another simple, but tasty “tapa” made by topping a slice of baguette with a fried quail egg and a slice of fried chorizo sausage. “Cojonudos” loosely translated means “awesome” and judging by their popularity in tapas bars Burgos, they must be! Their “sister tapa” is the “cojonuda,” made with a small slice of morcilla (blood sausage) instead of chorizo sausage.
Quail eggs are about a third of the size of chicken eggs, are mottled grey and white. They are available by the dozen in many supermarkets in Spain and have become a very fashionable ingredient in “tapa” dishes and main courses.

I've called this great dish, with its slap-you-round-the-face flavors, "cheat's pappardelle," as you can cheat by cutting your own pappardelle from ready-made fresh lasagne sheets. Pangrattato is a rich bread-crumb mixture originally used by poor people in Italy for giving their food extra flavor when they had no Parmesan cheese.
